I made Hot and Sour Soup for dinner. For tomorrow’s lunch, I am using almost the same ingredients as the hot ‘n sour for a change with least effort.
Bamboo shoots, ear mushrooms, celery (cuz I have to clean up my fridge), carrots, chicken, everything sliced thinly.
Marinate chicken in soy, sake (cooking wine) and sugar, at least for 30 min. Heat oil, stir fry chicken first, take it out. Stir in all the rest, add chicken back in, add 1 tbs sake, 1 tbs water, 1 tsp chinese vinegar, and soy to taste. If it’s to dry, just add bit water.
