It’s started off as “pizza instant noodle”. I ate so much instant noodle that I tried to find new way of using them. I mixed instant noodle with eggs, and then pan fried them. Then, I started learning about Japanese ingredients, and now I call it ‘Okonomiyaki’. The stuffing can be vary. I just use whatever I have in the fridge and put as much vegetables as I can. This way, you won’t feel like you’re eating that much veg.

Mix all these in a bowl:

  • choices for filling: ham / bacon/ shrimps/ crab meat/ squid / corn/ cheese/ green onions/ pickled ginger/ mushrooms/ carrots/ cabbage
  • 1 egg
  • about 3-4 tbs okonomiyaki/korean pancake flour, mix it with water to make it to thick batter
  • 1 pkg udon. I like to use Nongsim instant udon (seafood flavor). You can also use instant noodle/ramen. Reserve the noodle seasoning, you can add 1/2 to the batter.

Steps:

  • Heat up your iron griddle (or just use nonstick pan). Add a bit of oil.
  • Pour half of the batter to one spot (piling up), then, use your spatula to spread them out, make a nice round shape.
  • Flip it when the bottom has form a nice crust.
  • When it is almost ready, brush on ‘tonkatsu’ sauce on top. Then sprinkle with ’shaved bonito flakes’. The heat will meat the dried fish..mmmm… Move them onto your plate.. yum yum yum. You can eat them with Japanese mayo (kewpie) too, or as Indonesian, saus sambal lah. Repeat the steps for the 2nd half of mixture.

Even though pan fried is fine, cooking it on top of cast iron griddle, makes a difference on the crust. I love my stove top cast iron griddle I bought at Wal-Mart for $30, definitely worth it.
